OK, I’ll be the first to admit that this cooking method is not considered “true” barbecue, but that doesn’t take away from how tasty these birds are. To cook these I use a Faberware Indoor Rotisserie and Grill. Faberware no longer makes these, and I’m not sure why, as they do an awesome job on gamehens to roasts to 14 pound turkeys. Usually you can find one on the cheap at ebay (http://search.ebay.com/faberware-rotisserie_W0QQfromZR8QQpqryZfaberwareQ20rotissereQQsubmitsearchZSearch"]http://search.ebay.com/faberware-rotisserie_W0QQfromZR8QQpqryZfaberwareQ20rotissereQQsubmitsearchZSearch)
Gamehen:
This is a pretty simple recipe.
Remove the gizzards from the defrosted bird.
Place on spit and tie with butchers twine if needed.
Lightly oil while rotisserie is running, using your favorite oil, then apply a moderate coat of your favorite chicken rub. (Of course I’m using my BBQ’n Fools Signature Seasoning.)
Turn on the heating element, and wait about an hour.
When thigh reaches 180F, you’re done and it’s time to eat!
The layout and prep-
I seasoned this on the rotisserie, but took it off for the photo-
Let the cooking begin-
Almost ready-
Done to perfection-
Ready to cut up-
I've got to cook another one of these soon, my mouth is watering-
And yes, it's as juicy as it looks
Regards,

Okay...
I'd like to start off by saying this is a really cruel thing to post! Here I am at work, minding my own business when something that juicy and gorgeous strolls across my screen. This kind of content should be banned during work hours! _________________ mmmmmmm..... BBQ......... |
